Quite possibly the thing I am looking forward to most about Spring approaching is the fresh produce that will soon be so plentiful.  While the local grocers have wonderful produce year round there just isn’t anything quite like a salad made from locally grown veggies or better yet, home grown veggies!  Next time you make a salad consider taking a few extra moments to make these Asiago Cheese Crisps.  They are a great gluten free alternative to croutons!

Instructions:

Heat a skillet over medium heat.  If using a stainless skillet you may need to add a small amount of olive oil.

Sprinkle a small amount of Asiago Cheese into disc shapes in your skillet.  Make sure to leave some space in between each disc.

Allow the cheese to melt and become golden brown on the under side.

When the cheese has turned golden carefully turn them out onto a piece of parchment paper or a platter.

Let the cheese cool completely.  As the cheese cools it will become hard and you’ll have perfect cheese crisps!

I added three cheese crisps to the top of my salad and placed a small tomato in the center of them to create the look of a flower.  This is a beautiful way to garnish a salad for a dinner party or dinner guests.  You could also serve them in a pretty bowl or on the side of the salad as well.

My favorite thing about these Asiago Cheese Crisps is that they are gluten free.  I love the texture that croutons add to a salad but due to recent health concerns I am no longer consuming gluten.  The cheese crisps add a great flavor and a wonderful texture!
