We all know someone who tries every fad diet on the market. We love them, we support them, and sometimes we just want to eat a cheeseburger with them but can’t – because they aren’t eating bread now. Cheeseburger Stuffed Mushrooms to the rescue! I came up with this recipe after three or four friends went through various low-carb diets and all complained about missing cheeseburgers. I can’t replace the bread, sorry about that, but by stuffing all that cheeseburger goodness into mushroom caps hopefully I can help with the cravings. Enjoy!

How To Make Cheeseburger Stuffed Mushrooms:

Preheat oven to 450°

Combine beef, onion powder, and Worcestershire sauce until well blended, then form into 24 quarter sized ‘patties.’ (Think sliders, but smaller)

Cook patties in a medium skillet over high heat until browned on each side.

Butter (or coconut oil) a cookie sheet and place the mushroom caps evenly spaced. Layer each with one of the patties and your choice of optional toppings. Finish with grated cheddar cheese.

Bake for approximately 10 minutes, or until cheese is melty and mushrooms are slightly darker on the sides. Transfer to a serving plate and enjoy!

Pro Tip: Though low carb, this dish is not 100% carb free. This can be substituted however you wish to lower the carbs even more, but that is entirely up to you!
