It’s so important to eat healthy and teach our kids healthy eating habits, but sometimes it’s nice to break away and do something fun, too. These Pop Rocks Pancakes are not only delicious and fun, but also contain less sugar per serving than a single serving of regular syrup. Who says fun can’t also be healthy(ish)?

What You Need To Make Pop Rocks Pancakes:

For Pancakes:

  • 1 1/2 cup flour
  • 3 Tablespoons sweetened Kool-Aid powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 2 eggs
  • 2 Tablespoons vegetable oil

For Topping:

  • whipped cream

How To Make Pop Rocks Pancakes:

Begin by mixing together all dry ingredients. Make a well in the center and slowly stir in the milk until the batter is no longer lumpy. Last, add the eggs and oil. If the batter is too thick, you can add more milk until it reaches the right consistency. Cook pancakes on a well greased griddle at medium heat until each side is golden brown. Top with whipped cream and pop rocks before serving. Enjoy!
