Soft, sweet, and such an easy treat to make–it’s like the perfect summertime treat, but fancy enough you could make them for a party!

Are you ever totally unsure about what kind of dessert the kids might love to have for their playdate or, even a fun variation on the traditional cake for their birthday?
No, me either.
LOL!
But, these Gooey Cake Batter Bars are are Every Kid’s Dream.
And, awesomely enough, they’re super easy to make and delicious enough that they’d be really cool for a pot luck or a family reunion (that’s where my batch is headed this weekend).
It all starts with that amazing bottom layer of gooey pink fluffy cake batter.
It’s like a little dream.
You just make a “typical” cake batter…but then you add the magic ingredient: cream cheese.
I’m telling you, that cream cheese…it makes these gooey cake batter bars LOOK like a regular cake.
But, it IS the “gooey” in the “gooey”–you know, what with all the moisture it adds to the traditional batter.
Now, I’d like to pause here.
I love my gooey cake batter bars to be pink.
But, if you’re not in the “pink camp” feel free to color them blue or orange.
Frankly, they’re your cake batter bars, so you do what you want with them.
You’ll notice in the picture here that I tamp down my gooey cake batter bars with this fancy tool I like to call “the back of my fist”.
Feel free to break-out your tool like this one…they don’t have to be perfectly flat…just get the job done.
Once that pink bottom layer is all done and ready to move on to the next, get ready, because the next layer–just as easy as the first.
There’s not even any real magic ingredients in this layer.
Just yumminess.
Which, really, if we’re being serious with each other, is the point of all the recipes we try to make here.

Gooey Cake Batter Bars
Ingredients
- 1 white cake mix
- 3 eggs divided
- ½ cup butter
- 8 oz cream cheese
- 1 teaspoon vanilla
- 3 ½ cups powdered sugar sprinkles of your choice
Instructions
- Preheat oven to 350 degrees.
- To make crust layer, combine cake mix powder, 1 egg, and butter.
- Press dough into a greased 9×13 cake pan.
- For gooey layer, mix cream cheese, vanilla, 2 eggs, and powdered sugar together. Spread evenly over crust.
- Topping things off with sprinkles of your choice.
- Bake at 350 degrees for 32-35 minutes.
