Mini Blueberry Donuts
Donuts were a staple in my home growing up. Sunday morning’s for breakfast, birthday’s, when we were running late to school…didn’t matter what the occasion, we depended on donuts to usher in our mornings. They are such a fond memory for me – a memory I want to share with my own family now – so in the spirit of memories and homemade-love I bring you this recipe for Mini Blueberry Donuts. What You Need To Make Mini Blueberry Donuts:
Donut:
- 1 cup flour
- 1/3 cup sugar
- 1/4 Tablespoon baking soda
- 1/2 teaspoon baking powder
- 1/3 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1 egg
- 1/3 cup heavy whipping cream
- 1/4 cup greek yogurt
- 1 Tablespoon melted butter
- 1 teaspoon vinegar
- 1 teaspoon vanilla extract
- 25 fresh blueberries (smashed)
Topping:
- 2 cups powdered sugar
- 25 fresh blueberries (smashed)
- 1/4 cup hot water
- 1 drop blue food coloring (optional)
- 1 drop red food coloring (optional)
How To Make Mini Blueberry Donuts:
Preheat oven to 350 degrees F.
In a large bowl, combine all dry ingredients (flour, sugar, baking soda, baking powder, salt, and nutmeg).
In a medium bowl, beat one egg, then combine all wet ingredients (heavy whipping cream, greek yogurt, melted butter, vinegar, vanilla extract, and blueberries).
Stir the wet ingredients into the dry ingredients until evenly distributed.
Pour batter into a piping bag, then pipe into 12-count mini donut pan (non-stick) until each donut is halfway filled.
Bake for approximately 10 minutes.
While that is baking, combine all topping ingredients (powdered sugar, blueberries, hot water, and food coloring). Stir well and set aside.
Once donuts have cooled at least five minutes, drizzle with the topping and serve. Enjoy!
