Mississippi Mud Bars

As well as I can remember I was in either first or second grade and the accomplishment was HUGE. We didn’t celebrate it, but if we had I wish it had been with these Mississippi Mud Bars. Between the chocolate and the marshmallow my younger self would have happily sat down with a dictionary and lucubrated (SAT-Prep bonus points!) as many big words as possible that night. Enjoy!

What You Need To Make Mississippi Mud Bars:

Bars:

  • 2 cups sugar
  • 1 cup softened margarine
  • 4 eggs
  • 1 1/4 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla
  • dash of salt
  • 2 cups mini marshmallows

Sauce:

  • 1/2 cup margarine
  • 1/4 cup cocoa powder
  • 1/3 cup milk
  • 1 teaspoon vanilla
  • 2 cups powdered sugar

How To Make Mississippi Mud Bars:

Preheat oven to 350°.

In a large bowl, cream margarine and sugar. Add eggs one by one and continue to beat until well blended. Stir in flour, cocoa powder, vanilla and salt.

Pour into a 13×9 inch pan and bake for 25 minutes. Remove from oven and cool for 10 minutes before spreading marshmallows over the top.

Next, melt margarine in medium saucepan. Stir in cocoa powder and milk, bring to a boil, and cook for 5 minutes while stirring constantly. Remove from heat and mix in powdered sugar until sauce is smooth.

Pour over marshmallows. Enjoy!

Pro Tip: Want to make your taste buds explode? Sprinkle a pinch of flake salt (or finishing salt) over the frosting after you have spread it onto the bars.
