What You Need To Make Mocha Cupcakes with Irish Cream Frosting:

  • 1 box of chocolate cake mix
  • 1/4 cup instant coffee
  • 4 sticks of unsalted butter
  • 4 Tablespoons Irish Cream Liqueur (I use Bailey’s)
  • 1 box of powdered sugar (4 cups)

How To Make Mocha Cupcakes with Irish Cream Frosting:

Follow all instructions on the box of cake mix for making cupcakes and mix in the instant coffee to give them a mocha flavor. While the cupcakes are cooking, cream the softened butter with an electric mixer until the color is light. Slowly blend-in the liqueur and once well blended, very slowly add in sugar until the mixture becomes creamy. Once cupcakes have cooled, frost and enjoy!

PRO TIP: If you do not have an icing bag you can make one using a quart-sized plastic bag. Simply add about half of the icing to the bag and twist the top so that the icing within the bag becomes taut. Snip off a small corner of the bag and slowly pipe icing onto your now cooled cupcakes. Repeat with a separate bag for the second half of your icing. Enjoy!
