Peek A Boo Pasta Sauce

What You Need To Make Peek A Boo Pasta Sauce:
- 1 tbsp olive oil
- 1 small onion
- 1 small bell pepper (red or green)
- 1 tbsp diced garlic
- 1/4 cup yellow squash, diced
- 1/4 cup zucchini, diced
- 1/4 cup pureed carrot (2 jars of baby food is perfect for this)
- 1/4 cup pureed broccoli or peas or spinach (2 jars of baby food is perfect for this)
- 1 15 oz can fire roasted diced tomatoes
- 1/4 cup diced okra (seeded)
- fresh herbs to taste
- 1 teaspoon balsamic vinegar
- 2 teaspoons sugar
- salt & pepper to taste
How To Make Peek A Boo Pasta Sauce:
In a medium sauce pan, heat olive oil. Add onion, pepper, garlic, squash, zucchini, and okra and saute until softened. Mix in remaining ingredients and simmer over medium heat (stirring occasionally to avoid sticking to bottom of pan) until thickened. Serve over cooked pasta. Enjoy!
Pro Tip: Okra contains a compound called mucilage which thickens when heat is applied. The okra itself won’t change the flavor of your dish, but it will help it stick to the pasta better.
