Potato, Sausage and Ranch Brunch Burritos {and a giveaway}
This is a sponsored post written by me on behalf of Simply Potatoes for IZEA. All opinions are 100% mine.
I like to cook for my family, but not because I just enjoy toiling for an hour over difficult-to-prepare meals. No, like most moms, I like to cook so we can enjoy a meal together, so ease-of-prep and family-squeals-of-happiness are high on my list. That’s where Potato, Sausage and Ranch Brunch Burritos, an easy one-skillet recipe using Simply Potatoes Hash Browns, comes-in. Easy to make and a crowd-pleaser every time, these breakfast burritos are a favorite go-to brunch for my family.
Ingredients for Potato, Sausage and Ranch Brunch Burritos
- 4-6 tblspn oil (canola or olive, whatever you normally cook with)
- 1 package Simply Potatoes Hash Browns made by the Crystal Farms Company, which I found in the refrigerated dairy section at my local Wal-Mart
- 1 package breakfast sausage of your choice
- 1 package of your favorite ranch dip mix, appx 1 oz.
- 1 cup shredded cheese
- tortillas (corn or flour, your choice)
Putting Together Potato, Sausage and Ranch Brunch Burritos
- Get out your best skillet and put it over the stove on medium-high heat.
- Put at least 2 tblspns of oil in the pan before it gets hot and allow the oil to heat.
- Once the oil is hot, pour the entire package of Simply Potatoes Hash Browns into the pan. Since they’re fresh, never frozen, Simply Potatoes are going to cook-up nice as if you just shredded the hash browns yourself, so be ready! Be careful and just follow the easy directions for cooking and flipping the hash browns.
- While that’s cooking, slice your sausage into small bite-size pieces. I like mine to be about the size of the end of my thumb, so I can get a bit of everything in one bite of my burrito.
- When the hash browns are just ALMOST done (all nice and crunchy golden-brown), pour the ranch dressing mix, sausage and cheese into the skillet with the hash browns. Give the mixture a stir or two and get the sausage cooked, the cheese melted and the ranch mixed in well.
- Take the skillet off the stove and serve with tortillas and even salsa, if you like it that way (I do!).
Simply Potatoes are fresh, never frozen and can be located in the refrigerated dairy section. They are easy to prepare and have on hand–there is no peeling or shredding required, making breakfast or brunch super-fast and fun to make. Simply Potatoes are made with real ingredients and make a meal that much more awesome since you didn’t have to worry about all that.
