Red Velvet Whoopie Pie

These cream-filled Red Velvet Whoopie Pies are light, fluffy, and delightful. Enjoy!


  • Whoopie Pie:
  • 2 1/2 cups flour
  • 1 Tablespoon cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup softened butter
  • 1/4 cup softened shortening
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 Tablespoon red food color
  • Filling:
  • 4 oz. cream cheese
  • 1 1/2 cups powdered sugar
  • 4 Tablespoons butter
  • 1 teaspoon vanilla extract


  1. Whoopie Pie:
  2. Preheat oven to 350 degrees f, then line baking sheets with parchment paper.
  3. Sift flour into a large bowl, then add cocoa, baking soda, and salt. Whisk to combine.
  4. In a separate bowl, using either an electric mixer or Kitchenaid, cream together the butter, shortening, and sugar until fluffy. Next, blend in egg, vanilla extract, and food coloring. Alternate between adding in the flour mixture and the buttermilk until completely combined.
  5. Using an ice cream scooper, scoop batter onto baking sheets, about two inches apart. Make sure you have an even number of pie halves.
  6. Bake for about 10 minutes. Remove and cool for 5 minutes before placing on a wire rack to cool completely.
  7. Filling:
  8. Beat cream cheese and butter until creamy. Continue to mix on low and slowly add powdered sugar until combined. Last, mix in vanilla extract until just combined (don’t overmix).
  9. Assembly:
  10. Pipe filling onto the bottom half of half the pies, then sandwich together with other halves. Enjoy!


Whoopie Pies have the texture of a cake, but the convenience of a cookie. Traditionally they are chocolate with a cream filling, but with imagination any number of combinations are possible. If you plan to decorate with powdered sugar, do so within minutes of serving, otherwise the moisture from the pie might make the powdered sugar disappear.
