  5. Southern cornbread with sugar in it–Yuck! Never in my house. I ate lunch at a real phoo-phoo acquaintance house recently and she served cornbread dressing loaded with sugar. It was beyond awful and soured me on the whole meal.

  9. Hi. Where we live self-raising corn meal is not available. Do you have the recipie that uses actual corn meal? Thanks!

    1. Add one teaspoon baking powder to one cup corn meal and it’s self-rising!!!

  10. For Those Of You That Can Not Find Self Rising Corn Meal….You Can Make It Really Easily!!!

How Do You Make Self Rising Cornmeal?
Per Cup Of Self-Rising Cornmeal: 1 Cup Of Cornmeal Mixed With 2 Teaspoons Of Baking Powder, And 1/2 Teaspoon Of Salt.

  11. Good grief! All these comments over 1/2 teaspoon sugar. I’m born and raised and still live in Mississippi. My mama was likely to put a little sugar in just about anything; don’t really remember about cornbread. The recipe sounds just great! Now for what I really came to say. It would sure be great if there was a print option somewhere, and if there is, sorry I must be blind!

    1. and I’m replying to my own comment… These folks who don’t know about self-rising cornmeal… Are they from another country perhaps? You know nothing shows about origin.

      1. Hey Charlotte!

The print options were a bit glitchy so we took them off for now. Underneath the bottom picture is a more concise version of the recipe so you can either follow it on a tablet as you’re cooking or copy it into a document to print. I’m working on getting a new recipe print plugin installed, but don’t have it quite yet.

As for the sugar, I had NO IDEA it would cause such a stir! This was my mama’s recipe, and I’m pretty sure she either got it from her mama or from our neighbor Mrs. Anderson when we lived in Louisiana. My mama was a field hand growing up and her family traveled all over the south and the east coast picking everything from cotton to peaches and gathering recipes and stories along the way.

I know we made this recipe as far back as the 1980’s, and she still makes it today, but I’m not sure where it came from before that.

Just from studying food science ( I write a LOT of recipes, and research them all before sharing them on here), I know that salt is used to open up more taste bud receptacles in recipes, vanilla is a flavor enhancer, and sugar adds a little moisture and locks in any moisture already found in a recipe.

So maybe the reason a lot of people on here never heard of sugar in cornbread is they’re used to super dry cornbread. My mama’s always was a bit soft and tender, and that’s how I grew up with it so that’s the way I prefer it to this day.

  12. Please send a link for the “self rising cornmeal mix” so I can make it. If you’re referring to the “little Box from the grocery store”, then this isn’t really homemade.
