I’m trying to eat healthier. Stop laughing, really! I am! But it’s hard…especially with all the delicious sweets that seem to surround me during my most vulnerable times. It’s okay, though, because I’m going to plan ahead with this super delicious Strawberry Smoothie & Granola Parfait! Strawberries are so great for you with all that vitamin C, but once you throw in the yogurt and that dense granola, it’s like I’m basically eating a salad. Okay, not really. You should never listen to me for health advice…food advice, yes. But not health. And since I AM so into the amazing food stuffs, you should REALLY listen to me when I tell you to try this one. Whether you make it for breakfast or as a daytime snack, you’re going to love it. Plus, you can always adjust the size and make a smaller version for the kiddo’s to enjoy after school when they come home famished and cranky! Enjoy!
What You Need To Make A Strawberry Smoothie & Granola Parfait:
- 2 cups strawberries
- ¾ cup vanilla yogurt
- ½ banana (optional)
- 1 cup granola, divided
- Fresh strawberries for garnish (optional)
How To Make A Strawberry Smoothie & Granola Parfait:
In a blender, combine the fruit and yogurt and pulse until smooth.
Pour half of the strawberry smoothie mixture into a glass. Top with half of the granola.
Repeat the steps using the rest of the smoothie and the remaining granola.
Garnish with strawberries and serve immediately.
