These 3-Ingredient Thin Mint Cookies Make the Day Bright
Let me be very clear with you, the day that I run out of Thin Mint Cookies from the Girl Scouts is a sad, sad day for me, every year.
But now I have these amazing 3-ingredient Thin Mint Cookies and I don’t have to be sad at all.
There’s no sadness because they’re super easy.
There’s no sadness because they’re super minty.
There’s no sadness because they’re incredibly chocolatey.
And no sadness because they’re insanely crispy.
Basically, these Thin Mint Cookies are perfection in 3-ingredients.
Sigh. I just love them.
And, just in case you didn’t already know this, I love melted chocolate.
It’s pretty–and it makes things taste amazing. I mean, duh.
But, you add a little mint?
Oh, my heart is just going crazy.
I love mint and chocolate.
They should get married.
Now, I always make an ever-loving mess when I dip my crackers in the melted chocolate.
So, this time, I tried to be super careful (you know, pictures).
I flipped the cracker with a fork, made sure I got all the edges all chocolatey, then pulled that puppy out.
And look at it…that first Thin Mint Cookie is always the best.
I put them on wax paper, then swirled the chocolate dribbling off the fork onto the top of the cookie.
It just makes a cute little swirl, and it’s not like you want that chocolate to go to waste, right?!
See? All those little swirlies are so cute!
And, after a few minutes in the freezer?
I don’t know about you, but my favorite way to eat Thin Mint Cookies is straight from the freezer.
So I stash these in an old box of peas (the peas have long since been removed) so the kids can’t find them
I call that a ninja-level parenting hack.

- 18 Ritz Crackers
- 1 cup mini chocolate chips
- 1 tspn mint extract
- Place chocolate chips in a microwave-safe bowl. Microwave in 30-second increments, stirring between, until completely melted
- Add mint extract.
- Stir until completely mixed.
- Dip each cracker into the chocolate, then place on a sheet of wax paper.
- When all crackers are chocolate-coated, place in the freezer for 10 minutes in order to set the chocolate.
