Watermelon Vodka Mint Lemonade

Every summer I have unexpected guests show up at my front door…and I love it. Summer is a time for visiting, for catching up, for spending time with friends who might be too busy to stop in any other time of year. Because I know they’re coming (even if sometimes unannounced) I like to keep drink ingredients on hand so that we can turn these impromptu visits into a party. This recipe for Watermelon Vodka Mint Lemonade is one of my favorites. It’s smooth, summery, delicious, and super easy to make in a pinch. Bonus, all of the ingredients in this drink are things I usually keep in my refrigerator at all times during the summer anyway, so I get to look like an awesome hostess on the fly. Enjoy!

What You Need To Make Watermelon Vodka Mint Lemonade:

  • 1 cup fresh chunked watermelon
  • 4 lemons
  • 1 bunch of mint
  • 8 cups cold water
  • 1/2 cup sugar
  • 1 cup vodka
  • ice cubes
  • 1 halved lemon
  • mint, lemon slices, and watermelon to garnish

How To Make Watermelon Vodka Mint Lemonade:

Begin by prepping the watermelon, lemons, and mint by removing watermelon rind and seeds, quartering the lemons and removing seeds, and removing mint stems.

Place the watermelon, lemons, half the mint, sugar, 2 cups of water, and a few ice cubes in a blender.

Blend until the lemons and watermelon are crushed. The mixture will be slightly foamy at this point.

Strain the mixture and add in remaining water and vodka.

Muddle (or juice) the halved lemon and distribute evenly into all the glasses.

Serve with ice and garnish with mint leaves, watermelon slices, and lemon slices. Enjoy!

Pro Tip: For a fun twist, freeze mint into your ice ahead of time to add more color to the glasses when you serve them. Enjoy!
