Cook French Toast With a Peach Compote
This French Toast with a Peach Compote is sweet, and crunchy. It's like the breakfast version of peach cobbler. And, bro, who doesn't love Peach Cobbler?

Ingredients
8
pieces
sliced white bread
or whole wheat
3
large eggs
2
tablespoons
brown sugar
1
teaspoon
vanilla extract
½
teaspoon
cinnamon
Butter
1
large peach
½
cup
granulated sugar
¼
cup
water
Juice of half an orange
Instructions
Remove pit and dice peach. Remove skin if peach skin skeeves you out.
In a medium saucepan, add granulated sugar, water and orange juice. Cook on medium heat for about 15 minutes.
Stir occasionally to ensure that everything is well combined. Depending on how your compote reduces you may need to add a bit more sugar to thicken.
Begin making your egg wash by cracking and whisking your eggs in a medium bowl.
Add brown sugar, vanilla and cinnamon. Whisk until well combined.
Transfer egg wash to a small pan for dipping bread.
Heat a large nonstick skillet over medium heat. Add 1 tablespoon butter.
Dip 2 slices of bread in wash. Bread should be lightly coated. (White bread absorbs the wash very quickly so a quick dip is all that is needed.)
Place two bread slices into the skillet.
Cook for about 5 minutes on each side or until golden and crispy.
Repeat steps 8-11 until all 8 slices of bread are used.
Plate, top with compote, and serve. (Or just eat it all yourself because it is so amazing.
Notes
I like to add some cream cheese to the toast before the compote. It makes it extra creamy and delicious!
