Strawberry Spinach Salad with Caramelized Bacon Vinaigrette

Ingredients

  • 1 bag baby spinach washed
  • 1 cup sliced strawberries
  • ¼ cup sliced almonds
  • ½ cup crumbled feta cheese

For Vinaigrette:

  • 6 thick cut bacon strips
  • ½ cup packed brown sugar
  • ¼ teaspoon cinnamon
  • ¾ cup olive oil
  • ¼ cup balsamic vinegar
  • salt and cracked pepper to taste

Instructions

  • In a large bowl, toss together the spinach, strawberries, almonds, and feta cheese. Set aside.
  • Next, preheat oven to 375 degrees.
  • In a medium size bowl, combine bacon, brown sugar, and cinnamon until bacon is thoroughly coated.
  • Arrange in a single layer on a cooking sheet and cook for 8-10 minutes until dark brown, flipping once about halfway through.
  • Allow to cool.
  • In a large mason jar (with a lid), combine oil, vinegar, salt, and cracked pepper.
  • Crumble the now cooled bacon and add to vinaigrette jar.
  • Close lid and shake until thoroughly blended.
  • Lastly, pour vinaigrette mixture over salad mixture and toss until well coated.
