What You Need To Make Strawberry Spinach Salad with Caramelized Bacon Vinaigrette:

  • 1 bag baby spinach, washed
  • 1 cup sliced strawberries
  • 1/4 cup sliced almonds
  • 1/2 cup crumbled feta cheese

For Vinaigrette:

  • 6 thick cut bacon strips
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon cinnamon
  • 3/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • salt and cracked pepper to taste

How To Make Strawberry Spinach Salad with Caramelized Bacon Vinaigrette:

In a large bowl, toss together the spinach, strawberries, almonds, and feta cheese. Set aside. Next, preheat oven to 375 degrees. In a medium size bowl, combine bacon, brown sugar, and cinnamon until bacon is thoroughly coated. Arrange in a single layer on a cooking sheet and cook for 8-10 minutes until dark brown, flipping once about halfway through. Allow to cool. In a large mason jar (with a lid), combine oil, vinegar, salt, and cracked pepper. Crumble the now cooled bacon and add to vinaigrette jar. Close lid and shake until thoroughly blended. Lastly, pour vinaigrette mixture over salad mixture and toss until well coated. Enjoy!

Pro Tip: To make this into a light, complete meal, toss in some diced, grilled chicken breast, a half cup of halved grape tomatoes, and 2 cups of cooked shell pasta. Stir together until well blended and enjoy cold.
