Potato, Sausage and Ranch Burritos {and a giveaway}

Like most moms, I like to cook so we can enjoy a meal together, so ease-of-prep and family-squeals-of-happiness are high on my list. That’s where Potato, Sausage and Ranch Brunch Burritos, an easy one-skillet recipe using Simply Potatoes Hash Browns, comes-in.

Ingredients

  • 4-6 tblspn oil canola or olive, whatever you normally cook with
  • 1 package Simply Potatoes Hash Browns made by the Crystal Farms Company which I found in the refrigerated dairy section at my local Wal-Mart
  • 1 package breakfast sausage of your choice
  • 1 package of your favorite ranch dip mix appx 1 oz.
  • 1 cup shredded cheese
  • tortillas corn or flour, your choice

Instructions

  • Get out your best skillet and put it over the stove on medium-high heat.
  • Put at least 2 tblspns of oil in the pan before it gets hot and allow the oil to heat.
  • Once the oil is hot, pour the entire package of Simply Potatoes Hash Browns into the pan. Be careful and simply follow the easy directions for cooking and flipping the hash browns.
  • While that’s cooking, slice your sausage into small bite-size pieces. I like mine to be about the size of the end of my thumb, so I can get a bit of everything in one bite of my burrito.
  • When the hash browns are just ALMOST done, pour the ranch dressing mix, sausage and cheese into the skillet with the hash browns. Give the mixture a stir or two and get the sausage cooked, the cheese melted and the ranch mixed in well.
  • Take the skillet off the stove and serve with tortillas and even salsa, if you like it that way (I do!).
