Mini Blueberry Donuts

Ingredients

Donut:

  • 1 cup flour
  • cup sugar
  • ¼ Tablespoon baking soda
  • ½ teaspoon baking powder
  • teaspoon salt
  • teaspoon ground nutmeg
  • 1 egg
  • cup heavy whipping cream
  • ¼ cup greek yogurt
  • 1 Tablespoon melted butter
  • 1 teaspoon vinegar
  • 1 teaspoon vanilla extract
  • 25 fresh blueberries smashed

Topping:

  • 2 cups powdered sugar
  • 25 fresh blueberries smashed
  • ¼ cup hot water
  • 1 drop blue food coloring optional
  • 1 drop red food coloring optional

Instructions

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine all dry ingredients (flour, sugar, baking soda, baking powder, salt, and nutmeg).
  • In a medium bowl, beat one egg, then combine all wet ingredients (heavy whipping cream, greek yogurt, melted butter, vinegar, vanilla extract, and blueberries).
  • Stir the wet ingredients into the dry ingredients until evenly distributed.
  • Pour batter into a piping bag, then pipe into 12-count mini donut pan (non-stick) until each donut is halfway filled.
  • Bake for approximately 10 minutes.
  • While that is baking, combine all topping ingredients (powdered sugar, blueberries, hot water, and food coloring). Stir well and set aside.
  • Once donuts have cooled at least five minutes, drizzle with the topping and serve. Enjoy!
