Easy Teriyaki Chicken

Ingredients

  • 2 Boneless Skinless Chicken Breasts
  • Teriyaki Sauce we used this homemade recipe
  • ½ Bundle Fresh Asparagus
  • ½ Cup Onion Diced
  • Green Onion Diced
  • Sesame Seeds optional, as topping
  • 2 Cups Cooked White Rice
  • Olive Oil Drizzle
  • Salt and Pepper to taste

Instructions

  • Start by making your homemade teriyaki sauce. You can certainly use store bought but since we are going for homemade here, I made my own using this recipe.
  • Next, cook your white rice and set aside.
  • Now, blanch your asparagus. This is the perfect way to make asparagus by boiling for 3-4 min then put in ice water and set aside.
  • Next, sauté chicken with oil salt and pepper. I sliced my chicken into thin slices so it’d help cook faster and it’s easier to eat when cooked.
  • Remove from pan and set aside.
  • Add a drizzle of oil and caramelize the onion, garlic and ginger.
  • Add in your asparagus and chicken to get it all nice and hot.
  • Add your homemade teriyaki sauce and turn down the heat. You want to toss ingredients in sauce and get them all nice and hot.
  • Put teriyaki chicken and veggies over rice and top off with sesame seeds and green onions.
  • Enjoy!
