Chocolate Protein Granola Bars

Sometimes, for breakfast, I just want something protein-packed so that I have enough fuel to get me through, because I know it’s going to be a long day. These Chocolate Protein Granola Bars are my go-to for those mornings. So full of flavor, but keeps me energized for anything that might come my way.

Ingredients
  

  • 2 cups of rolled oats
  • teaspoon of salt
  • ½ cup of Wow Butter or peanut butter
  • ¾ cup of raw or organic honey
  • cup of milk
  • cup of coconut protein powder
  • ¼ cup of Turbinado sugar or raw sugar
  • ½ cup of mini chocolate chips
  • 2 Tablespoons of Chia seeds
  • 1 teaspoon of organic cinnamon
  • 1 teaspoon of vanilla

Method
 

  1. In a large bowl, mix together all ingredients, until well blended.  
  2. Line a 9 X 9 pan with parchment paper.  
  3. Pour the granola mixture into the pan, and spread out evenly, smoothing with the back of a large spoon. Bake at 350 degrees for 15 - 20 minutes, or until edges begin to turn golden brown.  
  4. Remove from oven, and let cool for at least an hour, or until completely cooled before cutting.  
  5. Cut into bars.  
  6. Enjoy!
