Gluten Free Quiche Muffins

Ingredients
  

  • 9 large eggs
  • cup heavy cream
  • cup whole milk
  • 3 tbsp fresh herbs your choice, though basil or parsley have always been my favorite
  • pinch of salt and pepper
  • dash of nutmeg and cayenne
  • 2 cups fresh spinach
  • 1 cup diced ham
  • cup diced sweet onion
  • 1 cup swiss cheese or gruyere is also delicious!

Method
 

  1. Preheat oven to 375 degrees and grease a muffin pan (regular size, 12 muffins).
  2. In a large bowl, beat the eggs, cream, milk, herbs, salt, pepper, nutmeg, and cayenne until well blended.
  3. Mix in spinach, ham, onion, and 1/2 cup of cheese.
  4. Pour mixture evenly into muffin pans and top with remaining cheese.
  5. Cook for 20-25 minutes until cheese is golden brown.
  6. Cool for five minutes, and serve!
