Method
- Preheat oven to 350 degrees F.
- In a large bowl, combine all dry ingredients (flour, sugar, baking soda, baking powder, salt, and nutmeg).
- In a medium bowl, beat one egg, then combine all wet ingredients (heavy whipping cream, greek yogurt, melted butter, vinegar, vanilla extract, and pineapple).
- Stir the wet ingredients into the dry ingredients until evenly distributed.
- Pour batter into a piping bag, then pipe into 12-count mini donut pan (non-stick) until each donut is halfway filled.
- Bake for approximately 10 minutes.
- While that is baking, combine all topping ingredients (powdered sugar, pineapple, hot water, and food coloring). Stir well and set aside.
- Once donuts have cooled at least five minutes, drizzle with the topping and serve. Enjoy!
Notes
For a spicy, south of the border twist sprinkle Tajín (chili salt) over the donuts before serving. Tajín is a combination of chili pepper, salt, and dehydrated lime juice and is served over fruits such as strawberries, mango, cantaloupe, and especially pineapple. Tajín is an acquired taste, so be sure to taste test it if you have never had it before. Enjoy!
