Mocha Cupcakes with Irish Cream Frosting

Ingredients
  

  • 1 box of chocolate cake mix
  • ΒΌ cup instant coffee
  • 4 sticks of unsalted butter
  • 4 Tablespoons Irish Cream Liqueur I use Bailey's
  • 1 box of powdered sugar 4 cups

Method
 

  1. Follow all instructions on the box of cake mix for making cupcakes, and mix in the instant coffee to give them a mocha flavor.
  2. While the cupcakes are cooking, cream the softened butter with an electric mixer until the color is light.
  3. Slowly blend in the liqueur and once well blended, very slowly add in sugar until the mixture becomes creamy.
  4. Once cupcakes have cooled, frost and enjoy!
