Method
For Cupcakes:
- Preheat oven to 350° and place paper baking cups into 24 regular-sized muffin cups.
- Press about a tablespoon or two of graham cracker into each cup…just enough to cover the bottom.
- In a medium bowl, mix flour, baking powder, baking soda, and salt.
- In a large bowl, cream sugar, butter, and eggs.
- Next, add lime juice, then peel.
- On a low speed, blend in cream cheese.
- Next, alternate blending in dry mixture and buttermilk.
- Pour cupcake mix into each paper baking cup on top of the graham cracker up about 2/3 full and bake for 20-25 minutes until an inserted toothpick comes out clean. Cool thoroughly before frosting.
For Frosting:
- In a large bowl, cream together butter and cream cheese.
- Slowly add sugar, then once combined, add lime, mint, vanilla and white rum.
- Note: If your frosting is too runny, add a little more sugar.
Topping:
- Top cupcakes with a slice of lime, a sprig of mint, and an almond bark curl.
