Tricked-Out Spicy Miso Beef Ramen Noodle Soup

There's a bit of magic that happens somewhere between mixing broth, noodles and a handful of spices to make Tricked-out Spicy Miso Beef Ramen Noodle Soup.

Ingredients
  

  • 6 cups beef broth
  • 1 tbspn fish sauce
  • 1 tbspn miso paste
  • 1 tbspn soy sauce
  • 1 tbspn butter or vegetable oil
  • 1 tbspn minced garlic
  • 1 chopped green onion
  • ½ tspn fresh grated ginger
  • 4 strips nori seaweed wrap for sushi
  • ½ tspn spicy chili sauce or sriracha sauce
  • 1 12 oz pkg udon or ramen noodles
  • ½ cup sliced oyster mushrooms
  • 2 cups cooked ground beef
  • 1 cup bean sprouts
  • 1 tbspn sesame seeds
  • 1 sliced jalapeno optional
  • 1 cup spinach leaves

Method
 

  1. Sauté butter, green onion, garlic, and ginger in the bottom of your dutch oven until the green onion starts to soften. Should just be 2-3 minutes following the butter melting completely.
  2. Add broth, miso, fish sauce, soy sauce and chili sauce to onion mixture. 
  3. Stir until mixed completely.
  4. Add noodles and simmer until the noodles have cooked completely (should be less than 5 minutes once the pot is boiling.
  5. Add ground beef, sesame seeds, oyster mushrooms and spinach leaves in each person's bowl.
  6. Enjoy!
