Tricked-Out Spicy Miso Beef Ramen Noodle Soup

There's a bit of magic that happens somewhere between mixing broth, noodles and a handful of spices to make Tricked-out Spicy Miso Beef Ramen Noodle Soup.

Ingredients

  • 6 cups beef broth
  • 1 tbspn fish sauce
  • 1 tbspn miso paste
  • 1 tbspn soy sauce
  • 1 tbspn butter or vegetable oil
  • 1 tbspn minced garlic
  • 1 chopped green onion
  • ½ tspn fresh grated ginger
  • 4 strips nori seaweed wrap for sushi
  • ½ tspn spicy chili sauce or sriracha sauce
  • 1 12 oz pkg udon or ramen noodles
  • ½ cup sliced oyster mushrooms
  • 2 cups cooked ground beef
  • 1 cup bean sprouts
  • 1 tbspn sesame seeds
  • 1 sliced jalapeno optional
  • 1 cup spinach leaves

Instructions

  • Sauté butter, green onion, garlic, and ginger in the bottom of your dutch oven until the green onion starts to soften. Should just be 2-3 minutes following the butter melting completely.
  • Add broth, miso, fish sauce, soy sauce and chili sauce to onion mixture. 
  • Stir until mixed completely.
  • Add noodles and simmer until the noodles have cooked completely (should be less than 5 minutes once the pot is boiling.
  • Add ground beef, sesame seeds, oyster mushrooms and spinach leaves in each person's bowl.
  • Enjoy!
