Preheat oven to 375 degrees and grease a muffin pan (regular size, 12 muffins).
In a large bowl, beat the eggs, cream, milk, herbs, salt, pepper, nutmeg, and cayenne until well blended.
Mix in spinach, ham, onion, and 1/2 cup of cheese.
Pour mixture evenly into muffin pans and top with remaining cheese.
Cook for 20-25 minutes until cheese is golden brown.
Cool for five minutes, and serve!
