Gluten Free Quiche Muffins
These Gluten Free Quiche Muffins are the savory, delicious answer to the gluten-free question you didn’t know you were asking! Seriously, they’re that good.

To Make Gluten Free Quiche Muffins You Need:
- 9 large eggs
- 2/3 cup heavy cream
- 1/3 cup whole milk
- 3 tbsp fresh herbs (your choice, though basil or parsley have always been my favorite)
- pinch of salt and pepper
- dash of nutmeg and cayenne
- 2 cups fresh spinach
- 1 cup diced ham
- 1/3 cup diced sweet onion
- 1 cup swiss cheese (or gruyere is also delicious!)

How To Make Gluten Free Quiche Muffins:
Preheat oven to 375 degrees and grease a muffin pan (regular size, 12 muffins). In a large bowl, beat the eggs, cream, milk, herbs, salt, pepper, nutmeg, and cayenne until well blended. Mix in spinach, ham, onion, and 1/2 cup of cheese. Pour mixture evenly into muffin pans and top with remaining cheese. Cook for 20-25 minutes until cheese is golden brown. Cool for five minutes, and serve!
Pro Tip: You can substitute well chopped broccoli florets for the spinach, or even diced peppers. For even more fun, think about substituting in your favorite pizza toppings. You can not go wrong with this simple recipe! Play around and enjoy!
