Ingredients

  • 1 tbsp olive oil
  • 1 small onion
  • 1 small bell pepper red or green
  • 1 tbsp diced garlic
  • ¼ cup yellow squash diced
  • ¼ cup zucchini diced
  • ¼ cup pureed carrot 2 jars of baby food is perfect for this
  • ¼ cup pureed broccoli or peas or spinach 2 jars of baby food is perfect for this
  • 1 15 oz can fire roasted diced tomatoes
  • ¼ cup diced okra seeded
  • fresh herbs to taste
  • 1 teaspoon balsamic vinegar
  • 2 teaspoons sugar
  • salt & pepper to taste

Instructions

  • In a medium sauce pan, heat olive oil.
  • Add onion, pepper, garlic, squash, zucchini, and okra and saute until softened.
  • Mix in remaining ingredients and simmer over medium heat (stirring occasionally to avoid sticking to bottom of pan) until thickened.
  • Serve over cooked pasta.
  • Enjoy!
