Mocha Cupcakes with Irish Cream Frosting

Ingredients
- 1 box of chocolate cake mix
- ¼ cup instant coffee
- 4 sticks of unsalted butter
- 4 Tablespoons Irish Cream Liqueur I use Bailey's
- 1 box of powdered sugar 4 cups
Instructions
- Follow all instructions on the box of cake mix for making cupcakes, and mix in the instant coffee to give them a mocha flavor.
- While the cupcakes are cooking, cream the softened butter with an electric mixer until the color is light.
- Slowly blend in the liqueur and once well blended, very slowly add in sugar until the mixture becomes creamy.
- Once cupcakes have cooled, frost and enjoy!
