Spicy Shrimp Ramen Soup

Sometimes, I just want a savory, delicious meal that has a little kick to it. And I like that I can make ANY meal for less than $1 per person. That kinda makes my day. Enter the Spicy Shrimp Ramen Soup recipe.

Ingredients

  • 4-8 uncooked shrimp peeled (or chicken tenders for the non-fish people)
  • 2 baby carrots chopped finely
  • 2 teaspoons chili-garlic sauce and then just put the sauce on the table, because you can add more spice then, if you like it hotter
  • 4 mushrooms sliced thinly
  • 2 hardboiled eggs
  • 3 finely chopped green onions
  • 4 packages of ramen noodles
  • Salt and pepper to taste

Instructions

  • Place 6 cups of water in a pot over high heat.
  • In a small pan over high heat, sauté the chili-garlic sauce, mushrooms, carrots and chicken, if you’re doing chicken. Cook until the mushrooms are tender and/or the chicken is cooked all the way through.
  • Once the water is boiling in the pot, place the shrimp and ramen noodles in pot and allow to boil for 3 minutes or until noodles are tender and shrimp is pink.
  • Mix the ingredients from the pan with the ingredients in the pot.
  • Salt and pepper to taste.
  • Garnish with onions and a half-hardboiled egg in each bowl.
  • Enjoy!
