Spicy Shrimp Ramen Soup

Ramen noodle recipes are some of the easiest out there. I love the crazy ways those simple noodles can be twisted and fit into a non-standard recipe. But sometimes, I just want a savory, delicious meal that has a little kick to it. And I like that I can make ANY meal for less than $1 per person. That kinda makes my day. Enter the Spicy Shrimp Ramen Soup recipe.

What’s also rather awesome about this recipe is the fact that it takes less than 10 minutes from thought to table. So, I’m feeding my family a delicious meal that’s so fast, I couldn’t have a pizza delivered any faster. Some nights, that’s all it takes to please my kiddos. The part that takes the longest is honestly boiling the egg. So, if I’m REALLY in a hurry and don’t have any pre-boiled in the fridge, I ditch the eggs and just add a couple extra shrimp. And, since my son doesn’t like fish (which he considered shrimp to be even though I’ve explained a million times that it’s a crustacean, not a fish), we make his with a frozen chicken tender or two. He says it’s just like chicken-noodle soup! LOL!

Ingredients for Spicy Shrimp Ramen Soup

  • 4-8 uncooked shrimp, peeled (or chicken tenders for the non-fish people)
  • 2 baby carrots, chopped finely
  • 2 teaspoons chili-garlic sauce (and then just put the sauce on the table, because you can add more spice then, if you like it hotter)
  • 4 mushrooms, sliced thinly
  • 2 hardboiled eggs
  • 3 finely chopped green onions
  • 4 packages of ramen noodles
  • Salt and pepper to taste

How to make Spicy Shrimp Ramen Soup

  1. Place 6 cups of water in a pot over high heat.
  2. In a small pan over high heat, sauté the chili-garlic sauce, mushrooms, carrots and chicken, if you’re doing chicken. Cook until the mushrooms are tender and/or the chicken is cooked all the way through.
  3. Once the water is boiling in the pot, place the shrimp and ramen noodles in pot and allow to boil for 3 minutes or until noodles are tender and shrimp is pink.
  4. Mix the ingredients from the pan with the ingredients in the pot.
  5. Salt and pepper to taste.
  6. Garnish with onions and a half-hardboiled egg in each bowl.
  7. Enjoy!

Serves 4.

Ingredients
