This recipe for baked apple with walnuts is like apple pie, without the crust! Great for gluten-free gatherings, or if you just want a quick summer snack.
Cut the top 1/3 off of each apple (save the top), then core the apple (but leave a little at the bottom).
Using a spoon, scoop out the apple, leaving about a 1" rim all around.
In a medium sized bowl, mixed scooped apple bits, butter, brown sugar, walnuts, and cinnamon.
Place apples into a casserole dish (you can spray the bottoms if you are worried about sticking).
Scoop mixture back into each apple, and place top back on.
Sprinkle white sugar over the tops of each apple.
Cook in preheated oven for 15 minutes, or until soft on the inside. Enjoy!
Notes
You can make this dish even healthier by removing the butter. Though I enjoy the taste, it will taste just as good without. Serve with a glass of milk, and a smile.
