Baked Apple With Walnuts

I don’t think there is a way for me to over-emphasize how much I love apple pie. It might be America’s Favorite Pie, but for me it’s the ONLY pie. It’s one of those things that I crave Crave CRAVE year round and I’m not even a little ashamed to admit that I’ve given into that craving more times than I can count. That being said, I am trying to make some changes this year. Little changes. This recipe for Baked Apple with Walnuts is one of those changes. It’s like a baked apple pie, minus the crust. Yes, it still has sugar, and a little butter, definitely tons of cinnamon, but no crust means it is gluten-sensitivity safe, and just the tiniest bit kinder to my waste-line. If every little bit truly does help, this is me lending you a hand. Enjoy!

What You Need To Make Baked Apple With Walnuts:

  • 4 large apples (pick your favorite)
  • 1/2 stick of butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup walnuts
  • 2 Tablespoons cinnamon
  • 1/4 cup white sugar (for topping)
  • 1/4 cup raisins (optional)

How To Make Baked Apple With Walnuts:

Preheat oven to 350°.

Cut the top 1/3 off of each apple (save the top), then core the apple (but leave a little at the bottom).

Using a spoon, scoop out the apple, leaving about a 1″ rim all around.

In a medium sized bowl, mixed scooped apple bits, butter, brown sugar, walnuts, and cinnamon.

Place apples into a casserole dish (you can spray the bottoms if you are worried about sticking).

Scoop mixture back into each apple, and place top back on.

Sprinkle white sugar over the tops of each apple.

Cook in preheated oven for 15 minutes, or until soft on the inside. Enjoy!

Pro Tip: You can make this dish even healthier by removing the butter. Though I enjoy the taste, it will taste just as good without. Serve with a glass of milk, and a smile.
