Preheat oven to 350° and place paper baking cups into 24 regular-sized muffin cups.
Press about a tablespoon or two of graham cracker into each cup…just enough to cover the bottom.
In a medium bowl, mix flour, baking powder, baking soda, and salt.
In a large bowl, cream sugar, butter, and eggs.
Next, add lime juice, then peel.
On a low speed, blend in cream cheese.
Next, alternate blending in dry mixture and buttermilk.
Pour cupcake mix into each paper baking cup on top of the graham cracker up about 2/3 full and bake for 20-25 minutes until an inserted toothpick comes out clean. Cool thoroughly before frosting.
