Mojito Cupcakes With Cream Cheese Icing
Who doesn’t love a great Mojito with a sprig of fresh mint and lime squeezed into it? So refreshing and delicious! Now…imagine that all wrapped up into these mojito cupcakes.
These cream cheese based cupcakes are what’s so wonderfully perfect and delicious about life.
Cinco De Mayo is on the way and what better way to celebrate than with these BOOZY Mojito Cupcakes with Cheesecake frosting? Sweet, sour and oh so good – watch out because consuming too many can make you feel a bit tipsy!

Mojito Cheesecake Cupcakes
Ingredients For Mojito Cupcakes:
- 1 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup butter
- 1 1/4 cup sugar
- 2 large eggs
- 2 1/2 tablespoons fresh lime juice
- 1 teaspoon finely grated lime peel
- ¼ cup cream cheese, softened
- 1/2 cup buttermilk
- 1 cup crumbled graham cracker
Ingredients For Frosting:
- 1 cup butter, softened
- 1/2 cup cream cheese, softened
- 4 cups powdered sugar
- 1 1/2 oz White rum
- 1/2 tablespoon lime juice
- ½ tablespoon vanilla extract
- ¼ teaspoon mint extract
Ingredients For Topping:
- Very thin slices of lime
- mint sprigs
- curls of almond bark
How To Make Mojito Cupcakes:
For Cupcakes:
Preheat oven to 350° and place paper baking cups into 24 regular-sized muffin cups.
Press about a tablespoon or two of graham cracker into each cup…just enough to cover the bottom.
In a medium bowl, mix flour, baking powder, baking soda, and salt.
In a large bowl, cream sugar, butter, and eggs.
Next, add lime juice, then peel.
On a low speed, blend in cream cheese.
Next, alternate blending in dry mixture and buttermilk.
Pour mojito cupcake mixture into each paper baking cup on top of the graham cracker. Fill up about 2/3 full, and then bake for 20-25 minutes until an inserted toothpick comes out clean. Cool thoroughly before frosting.
For Frosting:
In a large bowl, cream together butter and cream cheese.
Then you want to slowly add sugar, then once combined, add lime, mint, vanilla and white rum.
Note: If your frosting is too runny, add a little more powdered sugar.
Topping:
Top the mojito cupcakes with a slice of lime, a sprig of mint, and an almond bark curl.
