Ingredients

Ingredients For Cupcakes:

  • ½ cup butter softened
  • ½ cup brown sugar
  • ½ cup honey plus more for topping
  • 2 eggs
  • 1 ⅔ cup flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup milk
  • ½ teaspoon vanilla
  • ¼ cup sour cream
  • 2 ½ cups granola plus more for topping

Ingredients For Cream Cheese Frosting:

  • 8 ounces cream cheese softened
  • ½ stick butter softened
  • 3-4 cups powdered sugar
  • 1 teaspoon vanilla

Instructions

How To Make Cupcakes:

  • Preheat oven to 350.
  • Cream butter, sugar and honey with a mixer until fluffy, about 2-3 minutes. Add eggs and beat well.
  • In a small bowl, add flour, baking soda, baking powder, and salt. Mix well.
  • Add milk, vanilla and sour cream and beat with flour mixture until moistened.
  • Fill cupcake cups and bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  • Remove from pan and cool completely before frosting.

For frosting:

  • Using an electric mixer, beat cream cheese and butter. Add sugar and vanilla and beat well. Place into a piping bag fitted with a tip and pipe onto cupcakes.
  • Top with granola and drizzle with honey.
