The thing I love about honey is that is adds just the perfect amount of sweetness without being overpowering.

Honey can be put into and on just about anything. So, why not cupcakes?

While in the kitchen recently, I realized I didn’t have too many ingredients on hand. That’s when it hit me – honey on cupcakes? Yes please!

These sort of taste like S’more cupcakes without the marshmallow and chocolate (which you can totally add).

The trick to making any good cupcake (like these) is to not overmix your batter, If you do, it will not allow your cupcakes to rise and cook evenly – which none of us want.

For this recipe, I recommend mixing the dry ingredients first, slowly add the wet ingredients and mix well. You can do this by hand or use an electric mixer.

For the next part, when you add the granola, I would gently fold it into the mixture rather than using an electric mixer. The electric mixer can also break up the granola so fine that it’s more of a dust than a granola. I personally like the added texture and crunch in these cupcakes. 

Next, you’ll want to fill your cupcake liners about 2/3 full. Don’t over fill or you’ll have a mess in your oven – cupcake batter EVERYWHERE. It’s not fun to clean up – learn from my mistake!

Oh, and you’ll want to use cupcake liners. It helps prevent your cupcakes from burning and it’s easier to remove from the cupcake pan.

Now that you have perfectly baked honey granola cupcakes all that is missing is the frosting and of course, the honey. You might be eager to decorate and eat these since they smell so good coming out of the oven but be patient my friend.

However, the frosting is made with cream cheese and if you’ve never worked with cream cheese frosting before, you should know that is doesn’t take much heat at all for it to melt. So, cool the cupcakes completely before frosting.

Once done, top with honey and granola and be on your merry way!

Ingredients

Ingredients For Cupcakes:

  • ½ cup butter, softened
  • ½ cup brown sugar
  • ½ cup honey, plus more for topping
  • 2 eggs
  • 1 ⅔ cup flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup milk
  • ½ teaspoon vanilla
  • ¼ cup sour cream
  • 2 ½ cups granola, plus more for topping

Ingredients For Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • ½ stick butter, softened
  • 3-4 cups powdered sugar
  • 1 teaspoon vanilla

Instructions

How To Make Cupcakes:

Preheat oven to 350.

Cream butter, sugar and honey with a mixer until fluffy, about 2-3 minutes. Add eggs and beat well.

In a small bowl, add flour, baking soda, baking powder, and salt. Mix well.

Add milk, vanilla and sour cream and beat with flour mixture until moistened.

Fill cupcake cups and bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.

Remove from pan and cool completely before frosting.

For frosting:

Using an electric mixer, beat cream cheese and butter. Add sugar and vanilla and beat well. Place into a piping bag fitted with a tip and pipe onto cupcakes.

Top with granola and drizzle with honey.
