Pot roast is the reason slow cookers exist. Chuck roast, a packet of onion soup mix, carrots, potatoes, and beef broth — done. The roast comes out falling-apart tender every single time, and the liquid it makes is basically a ready-made gravy.
4. Chicken tortilla soup
Chicken tortilla soup from a slow cooker is better than most restaurant versions, and I will stand by that. Throw in chicken breasts, black beans, corn, diced tomatoes, chicken broth, salsa, and a pile of spices. Cook on low all day. Shred the chicken right in the pot. Pile on the toppings — avocado, tortilla strips, sour cream, cilantro if you’re into it. This one is a crowd-pleaser every single time.
5. Slow cooker pulled pork
Pulled pork is the slow cooker flex move. Pork shoulder, onions, garlic, brown sugar, smoked paprika, a little apple cider vinegar, and your favorite BBQ sauce. Eight to ten hours on low, and then you just shred it with two forks right in the pot. Pile it on buns, serve it over rice, eat it straight out of the pot. No judgment. It also freezes beautifully, which means you’re basically cooking twice with one effort.

6. Slow cooker lasagna
Slow cooker lasagna sounds fake, but it’s completely real and I love it. You don’t even have to boil the noodles first — the moisture from the sauce cooks them. Layer your meat sauce, ricotta, noodles, and mozzarella just like you normally would, but directly in the slow cooker insert. Cook on low for about 3 to 4 hours and you’ve got lasagna without the whole production. It’s not as pretty as oven lasagna. It tastes exactly as good.
7. Slow cooker butter chicken
Butter chicken from a slow cooker is genuinely impressive for how little work it takes. Chicken thighs, tomato sauce, heavy cream, butter, and a good blend of warming spices — garam masala, cumin, turmeric, ginger, garlic. Dump it all in, cook on low, blend part of the sauce at the end if you want it silky smooth. Serve it over rice or with naan and try not to eat the entire pot. Impossible.
8. Slow cooker mac and cheese
Slow cooker mac and cheese is the thing you bring to a potluck and everyone asks you about. Uncooked elbow pasta, evaporated milk, regular milk, tons of shredded sharp cheddar, a little cream cheese, mustard powder, salt. Cook on low and stir it every so often. The whole thing comes together into this creamy, actually-cheesy mac that tastes nothing like the box. Worth every stir. And if you want to take it over the top, a little crispy bacon crumbled on top is never a bad idea.
9. Slow cooker chicken and dumplings
Chicken and dumplings in a slow cooker is the ultimate cold-weather meal. Chicken breasts, cream of chicken soup, chicken broth, onion, garlic, and thyme do their thing all day. Then — and this is the important part — you open a can of refrigerated biscuit dough, tear it into pieces, drop it right on top, and cook for another 30 minutes until the dumplings puff up. Fluffy, thick, deeply comforting. This one is in heavy rotation.
10. Slow cooker honey garlic chicken thighs
Honey garlic chicken thighs might be the easiest thing on this whole list. Chicken thighs, soy sauce, honey, garlic, and a little ketchup — yes, ketchup, don’t @ me. Cook on low, make a quick slurry to thicken the sauce at the end if you want it glossy, serve it over rice. The sauce is sweet, savory, sticky, and completely addictive. Slow cookers don’t get enough credit. You basically do ten minutes of work and end up with something that tastes like you spent all day on it. Which — technically — you did.
Start with whichever one jumps out at you. The butter chicken and the honey garlic thighs are the easiest if you want an on-ramp. The beef stew is the one to make when you want to feel like an absolute legend.
