PB&J Sushi is the Perfect Packed School Lunch
Okay, so I have the perfect lunch container… and I had it sitting on the counter…
My daughter’s babysitter flipped out. Her exact words were “This is the best thing ever to pack lunch in. It keeps everything cool, it snaps together and it holds the perfect amount of food.”
From a babysitter who usually just smiles and waves at me as I am walking out the door, that’s a lot– so I decided to put it to the test and see if I could pack the perfect school lunch.

That lunch looks so good I could eat it RIGHT NOW! So, the first thing we did was to fill the top containers with something nutritious and delicious. You know how it is when you have junk for lunch and you just wish you’d eaten something full of vitamins and protein. So, we started there.

Trail mix and grapes. Tasty, and fun. They’re the perfect sides.

Then I made peanut butter and jelly sushi! This is totally my favorite thing to pack for lunch because you can just pop them in your mouth and they are delicious.
DELICIOUS! Oh and because I love you, here’s how to make them!
How To Make Peanut Butter and Jelly Sushi
You start with a couple of pieces of bread. Whatever kind floats your boat. And a rolling pin.

Then you roll it out super flat.

It takes a minute or two, and you might have to go over it more than once.

Now, cut off the edges so your bread is all crustless. Nobody likes crusty sushi.

Then, cut those down the middle. This is where you can decide if you want squatty more traditional sushi or longer sushi. I like it longer for these. I think you get more pb&j that way.

Now, spread them out and add a little peanut butter to one end of the bread. DO NOT SPREAD IT ALL OVER THE BREAD OR YOU WILL HAVE A SUSHI DISASTER, PEOPLE.

Now, we roll.

Roll slowly, and sort of squish the excess down to the end of the sushi.
They fit perfect into the Rubbermaid LunchBlox and you have the perfect school lunch. EAT UP!
