The shiny and dull sides of regular aluminum foil do the same job. The difference is a souvenir from manufacturing, not a secret set of cooking instructions nobody bothered to put on the box.
That is genuinely the whole answer, but the way foil gets those two finishes is actually kind of satisfying.
Why aluminum foil has two different sides
Aluminum starts much thicker than the foil in your kitchen and gets rolled thinner and thinner. During the final pass, manufacturers roll two sheets together at the same time.
The Global Aluminium Foil Roller Initiative explains that the thinnest foils are rolled in two layers. The matte side is the inner surface during that double-rolling process, while the other side comes out shiny.
So there is no mystery coating hiding on one side of ordinary foil. One surface met the polished roller. The other met another sheet of foil. Then the two sheets were separated and rolled up for you to wrestle with while dinner is already running late.
Does the shiny side go toward the food?
For standard aluminum foil, it does not matter. Shiny side up, shiny side down, or whatever happens after the sheet tears diagonally across the box: the foil still works.
Reynolds says both sides of its standard, heavy-duty, recycled and precut foil products are interchangeable. The company also says both sides heat food at virtually identical rates.
That means you do not need to rewrap the baked potato because the “wrong” side is showing. Your casserole is not judging you. The foil is fine.
The one important exception: non-stick foil
Non-stick foil is different because one side has a food-safe non-stick surface. On Reynolds non-stick and grill foil, the dull side is the non-stick side and should face the food.
If you are not sure what kind you grabbed, check the package and look for printed guidance on the foil. Do not use the shiny-versus-dull rule by itself to guess, because ordinary foil and coated foil are not the same product.
Why the shiny-side myth keeps hanging around
The finishes look so different that it feels like they must have different jobs. One looks reflective and serious. The other looks like it has already been through something.
But with ordinary kitchen foil, the visual difference is about how it was rolled. It is not a built-in “hot side” and “cold side.”
The quick answer
- Regular foil: either side can touch the food.
- Why the finishes differ: one side touches a polished roller while the other touches a second sheet of foil.
- Non-stick foil: follow the package directions; the coated dull side generally faces the food.
So use whichever side is already facing the right direction. You have enough going on without assigning personalities to aluminum foil.
