Chocolate Protein Granola Bars

It happens that I somehow schedule myself to be in 45 places at once—all on the same day sometimes.

I don’t know how I manage it.

Because, some days, it’s like I don’t have to leave my desk and I’m free to do what I want all day.

But then, on others, I just have to be at my best for everything I have to accomplish.

(Uh…that’s like almost every day.)

Those days, I try to be on my best game from the get-go by turning to one of my favorite protein-packed breakfast recipes.

These easy protein granola bars are so yummy, I don’t even feel like I’m eating something that’s “good” for me.

No, I really feel like I’m having some decadent treat for breakfast, rather than a power-bar to help me tackle the day.

And, if I find myself running a little low around 2 in the afternoon, a long time after lunch has gone, but waaaaay too early for even an early dinner, I can grab one of these easy protein granola bars.

They’re just a great snack, breakfast, or, if I’m honest, some days, they’re lunch.

And they’re so easy to make–just a handful of ingredients and I’m ready to roll again.

I don’t even really look at the recipe anymore…

And, for the hungry tummy, you just get a lot out of them, and they’re so simple to pack in your purse, so you’ve got one when the need strikes.

And, trust me, the need strikes more often than I’d like to admit.

Otherwise, the need strikes and I don’t have anything for them—and they get all whiny when I eat snacks in front of them.

Ingredients

  • 2 cups of rolled oats
  • teaspoon of salt
  • ½ cup of Wow Butter or peanut butter
  • ¾ cup of raw or organic honey
  • cup of milk
  • cup of coconut protein powder
  • ¼ cup of Turbinado sugar or raw sugar
  • ½ cup of mini chocolate chips
  • 2 Tablespoons of Chia seeds
  • 1 teaspoon of organic cinnamon
  • 1 teaspoon of vanilla

Instructions

  • In a large bowl, mix together all ingredients, until well blended.  
  • Line a 9 X 9 pan with parchment paper.  
  • Pour the granola mixture into the pan, and spread out evenly, smoothing with the back of a large spoon. Bake at 350 degrees for 15 – 20 minutes, or until edges begin to turn golden brown.  
  • Remove from oven, and let cool for at least an hour, or until completely cooled before cutting.  
  • Cut into bars.  
  • Enjoy!
