Easter is right around the corner and chances are, you are still trying to figure out what to do for Easter dinner.

Possibly even what the Easter bunny is bringing the kids. I can help. This Easter Muddy Buddies Recipe is simple and easy to make for a crowd. It’s even the perfect “Bunny Bait” for the Easter Bunny!

I’ve been making muddy buddies for years they help me with portion control when I want something sweet, but not too much of it. And during that time, I’ve found there is a little trick to making these taste good.

Want in one the secret?

It’s using white chocolate chips! Some people think you can use regular chocolate chips (and you totally can) but the white chocolate chips add to the overall look and taste of a good muddy buddy.

My favorite brand is the Ghirardelli Classic White Chocolate Chips. I’ve found that not only do they taste better than other brands, but they melt easier too making these perfect for making muddy buddies!

Easter Muddy Buddies

What You Need:

  • 9 cups Chex cereal – 3 cups each Rice, Corn and Wheat Chex
  • ¼ cup peanut butter (can also use SunButter if you have a peanut allergy)
  • 2 tbsp butter
  • 1 cup powdered sugar, divided in (3) ⅓ cup portions

How to Make It:

Place each type of Chex cereal in a different bowl and set aside.

In a separate bowl, microwave chocolate chips, peanut butter and the butter for 1 ½ minutes and stir until smooth.

Pour the peanut butter mixture over each of the cereals.  Stir until they are evenly coated.

In a large ziploc, pour in ⅓ cup of powdered sugar and one of the cereal mixes.  Shake until well coated and spread over a baking sheet.

Repeat until all are coated.  

In the microwave, melt the candy melts according to package instructions.

Drizzle over the cereal mixture and allow to cool and set.  

Once it has set, mix together the 3 cereal mixes and add in the Cadbury eggs.

Store in an airtight container.  (If you have any left!)
