There’s a mushroom “espresso” on the draft menu for Hotel Polaris’ November 12 wine dinner in Colorado Springs. It comes with tarragon foam and burnt onion dust. And if you’re reading that wondering when the actual wine shows up, the first pour is listed before the opening bites.

The draw at this Polaris Pour harvest dinner is a chance to taste two Stag’s Leap Wine Cellars Cabernets from different vineyards side by side. The hotel’s publicist says the dinner runs 6 to 8 p.m. Thursday, November 12, at Pamela’s. Tickets are $180 per person, which puts dinner for two at $360 at the listed price.

Why these two Cabernets?

At a blind tasting in Paris in 1976, judges ranked a California red above its French Bordeaux competition. The winner was Stag’s Leap Wine Cellars’ 1973 S.L.V. Cabernet Sauvignon, the wine pictured here. Fifty years later, Hotel Polaris is pouring the winery’s FAY and S.L.V. Cabernets together. The hotel hasn’t announced the vintages guests will drink.

What’s on the menu at Pamela’s?

The publicist shared a draft menu, so the dishes and pours can change. It pairs pan-seared scallops with Aveta Sauvignon Blanc and roasted acorn squash agnolotti with Karia Chardonnay. The FAY and S.L.V. tasting goes with grilled Wagyu tenderloin. Having both glasses on the table lets you try the same bite with each wine.

Dessert on the draft menu is Polaris Vanilla Bourbon Dippin’ Dots with Colorado honey-soaked babàs and grapes. Where else are you going straight from a Napa Cabernet tasting to Dippin’ Dots on a Thursday?

Pamela’s is inside Hotel Polaris at 8989 North Gate Boulevard, Colorado Springs. Use the November 12 dinner reservation page to check current seats and cancellation terms for your party. The separate Book Now button at the top of the hotel website is for overnight rooms.
