Cranberry Pinwheels Are That Sweet And Savory Appetizer You Must Have In Your Life
To me, the Holidays are all about some cranberries. Okay fine, they are definitely about other things, but I love to think of bright red cranberries.
I used to think I didn’t like cranberries. I was dumb, because they are awesome! They are sweet and tart and everything good all wrapped up in a little red berry.
The first time I tasted these pinwheels, I had to be talked into it. I don’t know — I am weird. One taste, however, and my world was forever changed.
Oh My Holiday Goodness! These are the best things ever! I swear, I almost cleared the plate of all the sweetly savory Cranberry Pinwheels the first time I tried them.
Turns out, they are QUITE EASY to make. They are so good, I thought the lady that made them MUST be a master chef. NO! They are only 4 ingredients, rolled up in a flour tortilla, and sliced with a sharp knife!
Just make them, and I promise, people will think you are a genius. They are so good! They have that sweet cranberry kick, but are surrounded by the creaminess of the cream cheese, the saltiness of the feta, and the brightness of the scallions. So. Freaking. Good!
Make them per the recipe first. I swear, it will turn your world upside down.
If you find that scallions aren’t your thing, you can substitute a bit of rosemary.
You can also give them a bit more of an entree feel by adding some diced turkey or pine nuts.
Try them on different types of tortillas — the spinach tortilla is good.
BUT, try them per the recipe FIRST. It’s the best!
Cranberry Pinwheels
Ingredients
- Flour Tortillas
- 1 Block of Cream Cheese
- ½ Cup of Dried Cranberries
- 1 Tablespoons of Scallions
- 2 Tablespoons of Feta Cheese
Instructions
- In a large mixing bowl, combine the Cream Cheese, the Dried Cranberries, the Scallions, and the Feta Cheese
- Fold ingredients together until nicely incorporated
- Spread a thin layer of the mixture onto a Flour Tortilla
- Roll up the tortilla
- Cut the tortilla into 6-10 even pinwheel circles
- Repeat until the tortillas are gone
- ENJOY
Notes
Add a bit of diced turkey to make them an entree.
Don’t like the scallions? Add a bit of rosemary.
Like pine nuts? Add them on in!
