Grilled Cheese Caprese

Just because your kids want boring, crustless grilled cheese doesn’t mean you can’t play with your food! The following recipe for Grilled Cheese Caprese is Grilled Cheese done RIGHT!
To Make Grilled Cheese Caprese You Need:
- 4 slices of bread (Italian is delicious with this!)
- 4 slices of mozzarella
- 1 tomato
- 1 bunch fresh basil
- olive oil
- salt
- pepper
- ground clove
How To Make Grilled Cheese Caprese:
On a plate, combine olive oil, salt, pepper, and ground clove. Coat one side of each slice of bread with olive oil mixture. Heat a skillet over medium heat. Once heated, place one slice of bread (oil side down), then layer two slices of cheese, tomato, and basil (per sandwich). Cover with second piece of bread (oil side out). Cook until bottom is golden brown, then flip and repeat. Remove, and enjoy!
PROTIP : Italian chefs sometimes combine clove and basil in pesto recipes. It adds a slightly earthy, sweet flavor because the two ingredients share sweet compound called eugenol.
