Mini Raspberry Lemon Tarts

I don’t know about you but I am ready for spring. I am ready for the warm weather, beautiful colors, and butterflies flying around. Considering it’s still winter, I am going to have to settle for these Mini Raspberry Lemon Tarts which require only 4 ingredients including Reddi-wip which just so happens to be our partner for today.

What You Will Need to Make Mini Raspberry Lemon Tarts:

  • Fresh Raspberries
  • Lemon Pudding Mix (plus ingredients to make it)
  • Mini Fillo Shells (found in the frozen dessert isle)
  • Reddi-wip
  • Spoon

How to Make Mini Raspberry Lemon Tarts:

  1. Carefully remove the fillo shells from the package and evenly spread out on a plate or cookie sheet. Make sure you don’t crush them since they are a bit fragile.
  2. Prepare your pudding accordingly to the directions on the package.
  3. Use a small spoon or pastry bag to fill the fillo shells until they are almost full.raspberry lemon tarts step1

  5. Garnish with a fresh raspberry.
  6. Serve and enjoy!

Wow, can you believe how easy those were to make? It’s so easy that even your kiddos can help you make them! These would totally be great appetizers at a party! If you really want to amp up the raspberry flavor you can use a few drops of raspberry flavoring and mix it in the lemon pudding mix.

Share a Bite of Goodness in The New Year

Sharing can be a great way to show someone you care especially when it comes to sharing a delicious treat.
