Healthy (And Delicious) Oatmeal Pancakes

Pancakes are a staple in my house, and these healthy oatmeal cakes are full on replacing our regular ones. They are SO good!

My daughter BEGS for these, and they are so much more filling than regular pancakes, too!

Healthy Oatmeal Pancakes

Ingredients For Healthy Oatmeal Pancakes:

  • 1 3/4 cup oat flour
  • 1 Tbsp Honey/Maple Syrup
  • 2 tsp baking powder
  • 3 tsp cinnamon
  • Pinch of salt
  • 1 Cup Almond Milk (or dairy milk)
  • 2 tsp vanilla essence
  • 2 tsp Apple Cider Vinegar
  • 1 Tbsp Coconut Oil (plus a little extra for frying)
  • 2 Eggs/Flax Eggs

Healthy Oatmeal Pancakes

How To Make Healthy Oatmeal Pancakes:

  1. Combine the oat flour, baking powder, salt and cinnamon in a bowl.
  2. In a separate bowl whisk together the eggs (or flax eggs), almond milk, vanilla, apple cider vinegar and coconut oil.
  3. Add the wet ingredients to the dry ingredients a little at a time, while mixing.
  4. Allow the mixture to sit for a few minutes.
  5. Meanwhile place a pan over low-medium heat and add a little coconut oil.
  6. Add 1 scoop of batter to the warm frying pan and fry for a few minutes on each side or until golden brown. (allow bubbles to form before flipping).
  7. Continue the process until all the batter is finished.
  8. Serve with coconut/greek yoghurt and fresh fruit.
