Slow Cooker Taco Soup Crockpot Meal

Taco Soup is a family favorite around my house. During the winter, I like to put it in the crock pot early Sunday and let everyone munch on it all day any time of year. If friends show up, you can just hand them a bowl, because this recipe makes a lot of slow cooker taco soup!

I am all about cooking with my crock pot. I like things for cook slow and over time, because it makes them so flavorful, I am so not a pressure cooker kind of gal.

What You Need To Make Slow Cooker Taco Soup Crockpot Dinner

  • 1 lb. ground beef, Cooked (or ground turkey if that’s more your thing)
  • 1 Large Onion, Chopped (Sometimes I cook this along with the beef, and sometimes I leave it out, it just depends on what kind of mood you’re in, really.)
  • 1 Can Pinto Beans (You can substitute black beans here instead if you just really love them.)
  • 1 Can Kidney Beans
  • 1 Can of Corn (But you can totally leave this out if you hate corn. I am so not a corn lover, but everyone else in my family loves it, so I always leave it in. I also feel this way about black olives, and that’s why I never add them to my taco soup.)
  • 1 Can Ro-Tel (Really any spicy diced tomatoes and diced green chile combo will do, but I always just use Ro-Tel tomatoes green chile, because that is what my mom used to use.)
  • 1 Can Diced Tomatoes. (I usually get a big ‘ol can for this if I am having lots of people, or I just use a smaller can if it’s only the fam.)
  • 1 Packet Taco Seasoning Mix
  • 1 Pack Ranch Dressing Mix. (This is the secret ingredient that gives the soup it’s special zing! Don’t leave this out unless you want blah soup.)
  • 1 1/2 Cups Water

How To Make Slow Cooker Taco Soup with Rotel

  • In a large skillet, brown your meat. (This is the part where you can add in the onions or not. I like to, just because I love the smell of ground beef and onions cooking.)
  • Open all the cans and dump everything into your crock pot. Juice and all.
  • Let it sit on high for an hour or two then turn it down to low and you have the best darn crock pot taco soup you’ve ever eaten!

I usually serve mine with tortilla chips, but my husband swears by corn chips, so it’s kind of your choice there. He also loves to add just a dollop of cream cheese to his bowl to make it just a little creamier.

I hope you love my Crockpot Taco Soup recipe, as much as my family loves eating. However, if your family finds that my taco soup with Rotel is a bit spicy for their taste, then you can easily leave it out and add in a different variety of Rotel without the extra green chiles in it.

  4. I love this recipe though I have made just a few modifications. I make it vegetarian so instead of beef I add another can of beans (black beans), I also use fiesta canned corn instead of regular corn, and mild rotel and petite diced tomatoes. My daughter who usually does not like soup loves this! 🙂

  5. I tried this soup for the first time about 10 years ago at my mother in law’s house and I love it but I like a thicker soup so I added a can of refried beans in the place of the pintos and it turned out great and thick like I like my soups… This is a great recipe

  6. If you don’t like corn, try hominy in this soup. I like both, but the hominy gives a new texture. Love this soup. There are so many ways to BYOC (be your own chef) with this dish. Thanks for sharing your version. Quick and easy.
    As for Liz, who seems to be trolling in the early morning, get a cup of coffee and chill out. I’m sure you have cooked and eaten foods from other cultures, be thankful that Jamie took time to share.

How ignorant do you have to be, in this day and age, to reduce Mexican food & traditions (like May 5th, Doug), to 3 ingredients and an excuse to drink tequila & be blatantly offensive. We have GOOGLE, use it. Stop being ignorant. STOP CULTURE APPROPRIATION.

    9. Nothing about this recipe claimed to be Authentically Mexican. It’s called taco soup. Not Mexican soup. Ever heard of a choco taco? You going to wage a war with Mr Softee next? Beans, meat, and tomatoes are very typical ingredients in tacos btw. While I can always appreciate efforts to stop cultural appropriation and check myself regularly, I gotta say this post ain’t it. It’s counter productive to the cause of cultural awareness and gives it a bad name. This is why people who need to listen don’t want to. You’re ego tripping to feel superior, not helping anything.   8. I use quorn, healthy, artificial meat. No longer an animal meat eater. Works and tastes great!
    The quorn takes on flavors of whatever it’s cooked with. Yummmmmm

  16. Loved this recipe! Made it for my family, which contains my father and I as picky eaters and my recently gluten intolerant sister. California has been in a heat spell recently, but when we had 2 cold and drizzly days I took to this recipe to keep us warm. We ate the whole batch practically in one night! I used 2 cans diced tomatoes and one can of spicy green chilies because that’s what I had and we all really liked the spice to the soup. It’s so good it hasn’t been a week yet and we’re already going for round 2! And my stepmom loves it because it’s got easy ingredients you can keep in the house to just throw together during the day and it fits all our needs! Thank you so much for sharing! 5/5!
